I haven't written much this week, mostly because I have just been repeating the last roast with the same organic Sumatran. I have gotten to the point where I can roast that bean consistently, so tonight I am roasting the Indonesian Flores Bajawa Highlands. I am doing a typical Sweet Maria's Roast Curve, just as I have been doing with the Sumatran. The first crack came on time at minus 3:02, and I stopped the roast at -1:30, just a split second before the 2nd crack was about to begin (ha ha).
At this roast, the beans are not quite as attractive as they are at, say, Full City. There are still light stripes visible running down the middle of the flat side of the bean, and the beans are still kind of rough in texture.
My plan is to make one pot of this on Friday morning in my automatic drip coffee maker, and then one pot in my new Chemex (which should arrive on Friday, but alas! not in time for my morning pot). Then on Saturday I will finish this roast in the Chemex, so I will have the same been and the same roast but two different brewing methods. I want to see if I can taste the difference.
